Double Chocolate Cookies All The Way

 Lets Bake!
  • 1/2 cup organic margarine spread
  • 1/2 cup organic cane sugar
  • 1/2 cup organic brown sugar
  • 1 free range egg
  • 1/2 tsp. pure vanilla extract
  • 1/2 cup unbleached flour 
  • 1/2 cup spelt flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. fine sea salt
  • 1/3 cup cocoa
  • 1/2 dark chocolate chips

Preheat: 350 degrees Bake: 10-12 min.
Cream margarine and sugars. Add egg. Sift flour, baking soda, salt and cocoa. Gradually add to creamed mixture until mixed. Scoop by spoonfuls onto parchment lined cookie sheets, press down slightly with the palm of your hand. 

*Oven's are HOT, make sure to ask an adult to help you.

Banana Muffins

1 1/4 cup spelt flour
1 cup oatbran
1/2 tablespoon baking powder
1/2 teaspoon salt
4 tablespoons butter at room temperature
1/2 cup sugar
1 large egg
1 teaspoon vanilla extract
3/4 cup milk
1/4 cup applesauce
2 ripe bananas, mashed

Preheat Oven: 350 degrees


In a large bowl combine flour, bran, baking powder, salt (whisk together). Set aside.


Cream butter and sugar until smooth. Add in egg and vanilla and mix on low to combine. Add in remaining wet ingredients until just combined: milk, applesauce and bananas.


Fold dry ingredients into the wet. Do not over mix.
Scoop batter into non-stick muffin pan or line with paper cups.
Bake 18-20 minutes or until toothpick comes out clean.

Makes 12-16 muffins. Don't forget to get an adult help you with the oven!

Baking Banana Bread

One of my favorite things to do is bake. Today when I came home after school I made banana bread. I shared it with my family and they all really liked it. Here is the recipe:

Banana Bread
  • 1 cup spelt flour
  • 3/4 cup unbleached white flour
  • 3/4 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1/2 cup butter (room temperature)
  • 3/4 cup organic cane sugar
  • 2 mashed bananas    
 
~Sift dry ingredients. Cream sugar and butter until light and creamy. Add bananas. Combine to dry ingredients until just blended.
 
Bake: 350 degrees for 45-60 min. 

*Don't forget to get an adult to help.
     Oven's are HOT!
